Francis Mallmann

Francis Mallmann is Latin America’s most celebrated chef – a man who has transformed the way the world thinks about fire and food. Born in Patagonia and trained in the temples of haute cuisine in France, he abandoned the formality of Michelin kitchens to return to the wilderness of his homeland. Today, he is known for his elemental style of open-fire cooking: whole animals slowly turning on iron crosses, vegetables buried in embers, and meals staged in landscapes where the table is as extraordinary as the food.

Beyond his restaurants, Mallmann has become a cultural figure: author, television host, and philosopher. He hosts a handful of guests each year on his island in Patagonia, where dishes are prepared beneath the peaks and glaciers, paired with long conversations about poetry, art, and the rituals of life.

  • Day 1: Arrive at Lago La Plata

    Planes, cars, and boats transport the group from Buenos Aires to their remote destination of La Isla. Fly 2.5 hours from Buenos Aires to Comodoro Rivadavia. From there, a private transfer takes the group on a five-hour journey through remote cattle pastures to arrive at Lago La Plata. Finally, a 45-minute boat ride brings you to your final destination, where you’ll settle in for the next six days in Mallmann’s island cabin, La Soplada.

  • Days 2-6: Open-Fire Cooking and Island Exploration

    Mallmann begins to impart his knowledge of open fire cooking to his party of guests. Each day, he will deliver a different cooking masterclass to guests, from learning how to bake fresh lake trout in clay to the seven different types of fire.  Take this exclusive opportunity to get to know the enigmatic Francis Mallmann beyond his culinary intuition.

    After the day’s cooking lessons, guests explore the natural beauty of their surroundings with the help of a local mountain guide. Hike through the forest foraging for mushrooms, go spoon-fishing, or take a refreshing dip in the lake. Boating, fly fishing, yoga and massages are also available. End the day curled up by the fireplace with a good book or outside, gazing up at the untainted Patagonian night sky, or project a classic film for a memorable movie night with your group.

  • Day 7: Departure

    Wake up once more to a lake view before bidding farewell to La Soplada cabin, and your host. Journey back across the lake by boat, then do the road and plane journey in reverse, arriving back in Buenos Aires by late evening.
