Ecuadorian cuisine includes fresh seafood, exotic fruits, and hearty Andean staples. Local ceviche is particularly noteworthy, along with llapingachos, potato pancakes filled with cheese. For a unique drink, try canelazo, a warm, spiced alcohol, perfect for Andean nights.
