Nicaragua is Central America’s largest country -

Nicaragua is Central America’s largest country - and still, somehow, one of its best-kept secrets. Wild, expressive, and curiously under-visited, here’s how to experience it at its most compelling.

Begin in Granada, the country’s most photogenic city - a colonial town of bell tower-topped churches and pastel façades, where horse-drawn carriages still clip down cobbled streets, and churches fill to bursting during local fiestas. There’s plenty to explore: the abandoned railway station, small galleries and chocolate museums, rum and cigar factories tucked behind carved wooden doors. By night, retreat to @tribalhotel, a seven-room bolthole with serious design credentials.

From there, sail to Lake Nicaragua’s Granada Isletas, 365 volcanic islands scattered in the lake’s southern corner. @jicaroisland, set on its own private islet, is a standout: nine casitas shaded by forest, with hammocks strung between trees and views across the water to Mombacho Volcano.

Next, hop by helicopter to Ometepe for volcano hikes, quad biking and coffee farms, before finishing on the Emerald Coast: a 300-kilometre stretch of shoreline where the Pacific comes to a thundering halt. Lined with cloud forest and pristine beaches, it’s home to some excellent eco-lodges with surf straight off the sand - @mandla_nicaragua and @hotelmorgansrock are among the best.

For those charting a course through deepest Patago

For those charting a course through deepest Patagonia, Antarctica lies just a little further south. From Chile’s Puerto Natales, it’s a short flight over the Drake Passage to the White Continent, where a boutique expedition vessel will take you further still.

A land of raw and exquisite frozen seascapes, this is the natural world in its most natural state. Kayak around icebergs the size of small towns, trek shores populated by thousands of penguins, ski the Antarctic peninsula, and explore its many islands, bays and otherwise-inaccessible channels by zodiac. It’s not the kind of detour that you plan lightly, but for those who have the time, there’s little else that compares.

Set on a private island off Brazil’s Costa Verde, @ilhadoscocos is a slow, design-forward retreat from Seba Orth and Luisa Bianchetto of @estudioorth. Conceived as an architectural ode to the sea, the island combines clear waters, Atlantic forest and a beautifully simple, thoughtfully-restored six-room guesthouse.

Expect endless swimming and snorkelling, long lunches and sundowners on the deck. On land, a 4km trail leads to sweeping views across the coast, while boat trips deliver you to mangroves, fjord-like bays, and nearby Paraty, a beautifully-preserved colonial town known for its independent boutiques, artisans and restaurants.

Allow us to introduce Barichara, an impossibly pretty, terracotta-topped outpost in Colombia’s Santander highlands. This slow-paced village opens out onto the dramatic landscapes of Chicamocha Canyon; its cobbled streets, whitewashed façades and bougainvillea-draped balconies are said to have inspired the setting for Disney’s Encanto, though it remains refreshingly under the radar.

Our pick of where to stay? Head to @casadelpresidente, a five-room villa backed by mountains that was once home to President Belisario Betancourt, for a dose of offbeat, old-school Colombia.
